Favorite Lemon Blueberry Vegan Scones

  • 1 ½  cups of whole wheat flour
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup of organic sugar
  • ½ cup of soy butter
  • Zest lemon
  • ½ cup of soy milk
  • ¾ cup of fresh blueberries

In a mixing bowl, mix flour, baking soda, baking powder, salt and sugar.  Add lemon zest, blueberries, milk and butter.  Mix well until dough forms.

Drop from spoon onto cookie sheet and flatten.  Sprinkle with turbinado sugar.  Bake in preheated 400 degree oven for 13-15 minutes or until golden brown.
